Dark Chocolate Florentines
Ingredients:
150g flaked almonds
2 tbsps honey
2 tbsps nut butter
2 tbsps coconut oil
80g dark chocolate, 85%+ (for dipping them in!)

Method:
1. Spread almonds on a baking tray and toast them in the oven for around 8-10 mins of 170 degrees c
2. In a medium sized pan, melt the coconut oil and then add the honey & peanut butter. Stir well until all combined
3. Once toasted, stir the almonds into the pan. Transfer the mixture to a bowl & allow to cool a little (around 10-15 mins)
4. Spoon tbps of the almond mix onto a baking tray to create the little florentines. Pop in the fridge until set
5. Melt the dark chocolate in a bowl over a pan of hot water
6. Once melted dip the bottom of each florentine into the dark chocolate - place each florentine onto a plate (choccie side facing upwards!)
7. Pop in the fridge and once set, voila!
